From Dr. Richard Ehrhardt, Small Ruminant Specialist for Michigan State University. Presented at the 2012 National Sheep Symposium held in Spencer, IA. Accelerated production: an opportunity to increase production capacity and efficiency.
Every 3 months, experts from ASI (American Sheep Industry Association) produce this review for the American Lamb Board. It’s public information that can also be found on ALB’s own website (www.americanlambboard.org)
Excellent discussion of lamb meat quality and the factors (age, breed, sex, feed, ph, stress in last hrs/days/weeks of life) that cause it to vary. We intend, over the coming months, to add more articles on this subject—because we feel that it is important to the US sheep industry.
