Rooster slaughtering time. Two families came together for the job. My knives were these brand new poultry stickers and theirs were boning knives. During evisceration, mine were far easier to cut with. During slaughter, I got a good, clean kill and effective bleed with one stroke that left me feeling good that the birds didn’t suffer. I hear that the key is to only cut the skin, not the feathers, since feathers dull the blade.

Worked just fine. The knife was a little dull, so I recommend you sharpen a little before first using it.

Excellent knife for every cut from live bird to individually packed cuts of meat. The edge remains sharp and provides fast and clean cuts. It's not a cleaver, so don't try and cut bone with it. The edge sharpens quickly with a few pulls on a sharpener. If you can't dress a bird with this knife, the problem isn't the knife.
